Food Heroes of Co. Down - Carnbrooke Meats
Last week, chefs Paul & Ryan paid a visit to one of our suppliers, Carnbrooke Meats in Dromara, where we get a large amount of our meat from, including our wonderful beef sirloins for our Sunday Roasts. Paul was eager to meet up with his supplier, to find out more about the ethos at Carnbrooke, and understand more clearly the story behind their wonderful selection of locally sourced cuts. They were met by Jason Hamilton, who comes from a strong farming and butchering background, and a supplier clearly deeply passionate about his work. He told Paul and Ryan that Carnbrooke has been in the meat supply business for 6 years now, during which they have picked up the coveted Supplier Of The Year award, not once but twice - a clear indicator of the level of expertise & excellence they offer here in Dromore. Having butchered all over the world, Jason explained he was always eager to return to Northern Ireland, believing the farming heritage and skills of those involved provided some of the best quality produce available anywhere. His unswerving passion for NI meat means that Carnbrooke are looking to expand further over upcoming months, but he still implicitly believes in the "grass roots" approach of building solid relationships with his trusted farmers, to get the best of the best out to his customers in the trade.
Open honesty combined with knowledge and passion is the key, he says, and this is why finally, the excellence of NI produce across the board is now deservedly in the spotlight on an international stage as some of the finest in the world. Jason's experiences & expertise has meant several original and interesting cuts and styles have been introduced to Northern Ireland over the years - it was in fact Jason that bought daube over from France, and the Flat Iron steak from his time in Argentina. His favourite though, is simple, delicious Shoulder of Mourne Lamb - the finest anywhere, a signature dish that just bursts with unbeatable NI flavour. !
Jason and Carnbrooke firmly believe in the open exchange of ideas and clear communication between people in the trade - whether butchers, farmers, or indeed chefs, Jason explained that to move forward with pushing NI as a key player internationally in food, drink & hospitality, everyone in the trade needs to pull together and pool their ideas, to present the strongest possible version of NI to the global marketplace. It's time to get taken seriously! Jason eats out in restaurants regularly, to broaden his horizons on what is happening on plates across the country, but his core belief that NI produce is the best is one that doesn't alter. We'd like to thank him for taking the time to show Paul & Ryan around Carnbrooke, and for sharing his story with them - and we'd mostly like to thank him for his continuing delivery of first class meat & poultry for our guests to enjoy!
